This holiday season, Maxime Frédéric, the talented pastry chef of Cheval Blanc Paris, is bringing guests on a whimsical journey through time with his latest edible masterpiece - a delicate Christmas log shaped like a rocking horse straight out of a gourmet fairytale.
Maxime's interpretation of this beloved childhood toy is a feast for the senses, with its rich chocolate and hazelnut flavors that transport you to a world of daydreams and imagination. The log is composed of two parts: the bold chocolate shell that mimics the movement of a wooden rocking horse, and the sweet dessert delicately placed at the foot of the toy.

The chocolate shell is a work of art, with its amber hue that perfectly reflects the wooden design of the toy. The shell is made up of layers of chocolate, each with varying percentages of cacao, and is topped with crispy Gianduja. When broken, the shell transforms into a thousand sweet shards, making it the perfect dessert to share with loved ones during this festive season.
At the foot of the toy, the sweet dessert is crafted from hazelnut dacquoise biscuit, praline, and crispy shortbread, with a light mousse infused with vanilla-inflected caramel and adorned with medallions inspired by the historic Samaritaine building.
