ARCHIPELAGO FOOD FESTIVAL RETURNS TO SHOWCASE INDONESIAN CULINARY DELIGHTS IN MAKASSAR
Makassar played host to the Archipelago Food Festival (AFF), a celebration of Indonesian culinary excellence.
Makassar played host to the Archipelago Food Festival (AFF), a celebration of Indonesian culinary excellence. The event was held at Harper Perintis Makassar by ASTON, which is also marking its 8th anniversary. The AFF aimed to showcase the best of Indonesian cuisine to food enthusiasts in Makassar.
Winston J Hanes, Vice President of Operations at Archipelago International, expressed his pride in the quality of the dishes served at the event, saying "At Archipelago, we are committed to providing the best culinary experience, as seen in our restaurants, bars, and cafes. We also promote a wide variety of cuisines through TrEATs Everywhere promotions every quarter. Join us at this festival to experience our delicious dishes."
Thirteen Executive Chefs from hotels under the Archipelago International umbrella served up 64 dishes from across the archipelago. These included Woku Chicken from Manado, Pammarasan Beef from Toraja, Soto Banjar from Kalimantan, Eungkot Paya from Sumatra, Fried Sambal Embeh Chicken from Bali, Sinjay Duck from East Java, Bekakak Chicken from West Java, Bebalung Soup from Lombok, Tuna Rica Satay and many other menus.
The AFF is a traveling roadshow taking place in several cities across Indonesia every month throughout 2023. It is an initiative to support the hospitality industry, promote tourism, and introduce culinary delights with the best quality ingredients and professional cooking methods by Executive Chefs from Archipelago hotels. Denny Frederick, Corporate Executive Chef of Archipelago International, said "The AFF aims to introduce culinary delights with the best quality ingredients and professional cooking methods by Executive Chefs from Archipelago hotels."
In addition to sampling a wide range of dishes from across the archipelago, visitors to the AFF Makassar event enjoyed traditional dance performances, including the Toraja dance, Santri sword dance, and Balinese dance, as well as live bands and chef shows.
