Raffles Bali and Syrco BASÈ are excited to announce a special collaboration between Chef Gaetan Biesuz of Raffles Bali and Chef Syrco Bakker of Syrco BASÈ. This partnership brings together two award-winning culinary destinations to create an extraordinary dining experience set against the breathtaking beauty of Bali. From the stunning seaside of Jimbaran Bay to the serene and cultural heart of Ubud, each location offers a unique approach to nature-inspired ingredients and fosters deep connections with the local community. The four-hand collaboration will take place on September 9, 2024, at Rumari with the theme “Sea and Ocean,” followed by an event on October 4, 2024, at Syrco BASÈ themed “Land, Jungle, and Mountain.”

Rumari, meaning the “House of the Sun and the Full Moon,” is perched atop a hill with sweeping views of Jimbaran Bay. As the fine dining restaurant at Raffles Bali, Rumari is led by Chef Gaetan Biesuz, who draws inspiration from close relationships with like-minded partners, including local farmers and artisan producers. Each dish at Rumari is a modern culinary journey through Southeast Asia’s enchanting flavors, crafted with contemporary flair. Adhering to the 80/20 principle, Rumari’s menu highlights fresh, high-quality ingredients—80% sourced locally from the Indonesian archipelago and only 20% imported when necessary.

Chef Syrco Bakker, renowned for his expertise in two-Michelin-starred Pure C in the Netherlands, embraces Bali’s lush landscape at Syrco BASÈ, which opened in January 2024. Syrco BASÈ goes beyond conventional dining by offering a multi-sensory experience rooted in the culinary traditions of Bali, Indonesia, and Asia. Highlighting local ingredients with a commitment to Traceability, Nature, and Transparency (TNT), Syrco BASÈ not only tells the stories behind its ingredients but also showcases them through skillful presentation. This approach reflects Syrco BASÈ’s dedication to sustainability, transparency, and collaboration.
