Following the success of its traditional mill and bakery, chocolate factory, cheese cave, and wine cellar, Michelin-starred Executive Chef Eric Frechon introduces his fifth atelier, Il Pastificio, a pasta laboratory located in the hotel's basement.
Underlining his unwavering dedication to excellence, Eric Frechon handpicked Cristina Ternullo, a pasta master from Rome, Italy, to helm Il Pastificio. Each day, Ternullo meticulously crafts handmade pasta in a variety of eight traditional sizes and shapes. The dough undergoes a meticulous preparation process that spans over 24 hours before it is kneaded, shaped, rolled, and cut. Most pasta varieties are then dried before use, ensuring optimal texture and flavor.
Il Pastificio's pasta selection represents the diverse culinary heritage of Italy, taking guests on a gourmet journey through its various regions. From the southern regions, there's the delicate gnocchi, while the heart of the country is celebrated through the girolette pasta. Ternullo exclusively works with ancient heritage wheats, which are blended and milled into the perfect texture by the skilled bakery team in Le Bristol's own flour mill, located adjacent to the pasta laboratory. The carefully selected wheats, including Khorasan, soft wheat, einkorn, and marguerite, not only offer exceptional flavors but also have high levels of selenium, making them suitable for those with gluten intolerance.

Epicure delights guests with "candele" macaroni accompanied by black truffle, artichoke, and duck foie gras. At 114 Faubourg, langoustine ravioli takes center stage, while Café Antonia serves traditional ricotta-spinach ravioli, offering a taste of authentic Italian cuisine.
